My Doc told me that as things heal and our body's adjust, we will eat more, not because the pouch is bigger, but because it starts to go out as we put stuff in, this is normal.
As to the evenings, yes, this is my munchie time. What I eat, and as many as I want I might add, are SF pop cycles. They are only 20 calories each and some water. They don't fill you up, but they satisfy the need to munch.
If I am truely hungry, which my Doc also said is real hunger, not head hunger, I eat something small. Cheddar cheese seems to stay with me longer, so it's usually that.

I disagree with the comment regarding head hunger. I have been feeling hungry since I got home from the hospital. I KNOW the difference between head hunger and physical hunger...and let me tell you, this is the latter!
I'm with Elsa...I eat up to a 1/2 cup of food at each meal. I am supposed to eat 6-8 times a day, which I don't always do....but I do fit in my protein shakes.
Maybe you just need to add a little more food per meal? Think about it...you are only eating 3/4 cup of food a day. That isn't a whole lot, even considering the surgery!

Since I've moved onto solid foods I am hungry more often. Its real hunger, not head hunger as Chele stated, I know the difference. If I eat a more dense food I eat less of it. About 2-3 hours later I am looking for something else and just a little bit satisfies...until 2-3 hours later. I keep reaching for proteins be they dairy or beans, those work the best. My love/hate relationship with meat continues. My surgeon wants 3 meals and 2 snacks a day so that's what I am doing and what's comfortable. If I eat a denser food I eat just a few bites but if its softer (like yogurt or beans or cottage cheese) I eat about a 1/2 cup maximum.
