Yummy recipe
I have been craving fruits, veggies and salads lately. One of my coworkers who lost 100 lbs two years ago (not with WLS), brings this great salad to lunch and I asked her for the recipe. I made it and really enjoyed it. Thought some of you might want to try it:
Christine's Yummy Lunch Salad
3 ribs celery with leaves
2 large carrots
about 1/4 red onion (or, a couple of scallions, if you prefer)
1/4 to 1/2 red bell pepper
fresh parsely
salt and pepper to taste
Protein of your choice: garbanzo beans, chopped & cooked chicken, tuna, mozzerella or string cheese, low-fat salami or ham, etc.
Wishbone "Just-2-Good" Italian Dressing
Chop veggies, add protein, toss with dressing and refrigerate overnight.
