Strawberries With Cheesecake
This is a reversal of the standard cheesecake--instead of putting strawberries on top of cheesecake, you put the cheesecake in the strawberry! More fruit, less fat, and your taste buds still think they've eaten cheesecake. This is actually one of my favorites. A whole platter of these for a party looks gorgeous and allows guests to choose their portion of dessert.
Large strawberries
Whipped or regular cream cheese (full- or low-fat), about a tablespoon of for each strawberry. (If you are making just a few, store-bought whipped cream cheese is easier to work with. If you are making a several dozen, you can whip regular cream cheese yourself.)
Sweetener of your choice
Crushed graham crackers or other cookies of your choice, or chopped toasted nuts, or chopped chocolate, about a 1/4 teaspoon per strawberry (many cookies sold at your natural food store are sweetened with evaporated cane juice).
Wash strawberries and slice them in half lengthwise, from the leaf down to the tip.
Mix cream cheese with the sweetener, to taste. Start with a very small amount of sweetener per strawberry and keep in mind the strawberry itself is sweet and will add sweetness to the bite. You could even try no sweetener the first time and then add it as you like.
If you have a piping bag, use a decorative tip and pipe the sweetened cream cheese into the center of the strawberry, like filling a deviled egg. Fill it as high as you like. Or, fill strawberries using a teaspoon. Or, serve the cream cheese on the side and let everyone fill their own at the table.
Sprinkle the filled strawberries with cookie crumbs, chopped toasted nuts, or chocolate bits.
Serve immediately.
