You can use broccoli or brussle sprouts instead of spinach and I did not use the cottage cheese but it is good both ways..
1 box Dreamfields brand low carb linguini
4 boneless chicken breasts, baked, cooled and cut into bite-sized pieces
6 oz fresh baby spinach, washed and dried
1( 24 oz) container of cottage cheese
4 oz Velveeta®
1/4 cup butter
1 14 oz can low-sodium chicken stock (or use home made)
1 teaspoon minced garlic
Makes 12 Servings
Prepare pasta according to package directions.
Preheat oven to 350°F.
Bring to a boil in a medium saucepan the Velveeta, butter, chicken stock, and garlic. Add cooked chicken, and toss until well-coated. Set aside.
Assemble the layers in a 2 quart glass baking dish in this order: 1/2 the cooked linguini , 1/2 the chicken cheese mixture, all the spinach and the entire (24 oz.) container of cottage cheese. Top this with the remaining chicken, and then the remaining linguini. Top it all with 8 oz grated Cheddar cheese. Bake for 35-40 minutes until top cheese is bubbling and beginning to brown. Allow to set for 10 minutes before cutting.

Atkins Cajun Pork Chops
Ingredients For Cajun Pork Chops
1 tbsp paprika
1/2 tsp ground cumin
1/2 tsp sage
1/2 tsp Pepper, ground
1/2 tsp garlic powder
1/2 tsp cayenne pepper, (to taste)
1/2 tbsp butter
1/2 tbsp Olive oil
4 large Pork chops, 1/2 thick
Preparation Method for Cajun Pork Chops
1. Combine paprika, salt, sage, pepper, garlic powder, and cayenne on a plate. Coat chops with seasoning mixture on both sides.
2. Heat butter and oil over high heat in a large skillet until very hot. Place chops in skillet, reduce heat to medium and cook 8 to 9 minutes, turning once halfway through cooking time.

Both recipes sound really good...But my doctor says
to pasta, rice, soft bread, sugar and any fruit or vegetables with seeds..
I think the pork chops sound really good. But I'm not suppose to be eating pork yet..I can't wait until 10 months then I get to try steak..Alot of people tell me steak is really hard to eat afterwards..........Another month I get I get salad..........Thank You again for any future recipes.....Suzan
