If I had not made this recipe myself, I would NEVER have believed it is as low fat as it is and sugar free. It is amazingly good. It does take a lot of time (the cooling in between each step) but it is SOOOOOO worth it!!
SPLENDA® Pumpkin Cheesecake
Prep Time: 20 Minutes
Cook Time: 55 Minutes
Ready In: 5 Hours 15 Minutes
Yields: 20 servings
"Try this lighter version of a pumpkin cheesecake and you will be able to eat even more!"
INGREDIENTS:
Crust
1 cup graham cracker crumbs
1 1/2 teaspoons cinnamon
1/4 cup SPLENDA® No
Calorie Sweetener, Granular
1/3 cup light butter, melted
Filling
3 (8 ounce) packages fat free
cream cheese
2 (8 ounce) packages reduced
fat cream cheese
1 1/2 cups SPLENDA® No
Calorie Sweetener, Granular
3 tablespoons all-purpose flour
2 teaspoons cinnamon 1/2 teaspoon nutmeg
3/4 teaspoon ground ginger
1 pinch ground cloves
1 (15 ounce) can pumpkin
puree
1/4 cup fat free half-and-half
1/2 cup egg beaters®
1 tablespoon vanilla
Topping
2 cups reduced-fat sour cream
1/2 cup SPLENDA® No
Calorie Sweetener, Granular
1 teaspoon vanilla
2 drops maple flavor
DIRECTIONS:
1. Preheat oven to 350 degrees F. Spray a 9-inch springform pan with baking spray. Set aside.
2. Mix crust ingredients together and firmly press onto bottom of prepared springform pan. Bake 12-15 minutes or until lightly browned and firm. Cool.
3. Blend together cream cheese, SPLENDA® Granular, flour and spices on medium speed in an electric mixer until cream cheese is smooth and lump free. Scrape sides of bowl. Add pumpkin. Mix on medium speed until well blended. Scrape sides of bowl and mix until mixture is smooth and lump-free.
4. Turn mixer on low and slowly add half-and-half, Egg Beaters® and vanilla. Blend until well mixed.
5. Pour over prepared crust. Bake in preheated 350 degrees F oven 50-60 minutes or until center is slightly firm. Remove from oven and cool.
6. Prepare topping. Blend all ingredients together in a small bowl until well mixed. Pour on top of cheesecake and spread evenly. Return to oven and bake for 15 minutes. Remove from oven and cool 20-25 minutes on a wire rack. Chill 4- 6 hours or overnight in the refrigerator. This, like all cheesecakes, is best if prepared a day in advance.

Going to take my normal 1.3 mile walk here in a little while, try to increase my running time a little, too. Right now, can't go more than about 3 blocks straight before I have to slow to a walk again, gonna shoot for 4 tonight.

L - salad with about 1.5 cups lettuce, 3/4 cup cottage cheese and 1/2 cup stewed chicken
AS - protein bar
AS#2 - Kashi pumpkin spice flax granola bar
D - dunno yet
Water - been hitting water hard today
Vits - all good except my evening calcium - reminds me, I have some questions for you, in a separate post

We're just a couple of Ol' hicks down here in Southern Md, living on an old tobacco farm.
We don't grow tobacco tho
we mostly grow crabgrass on our 5 acres.
We've lived here for nearly 21 yrs ...in the woods
till...they built some HUGE new brick homes back behind our house
so we nearly live in a neighborhood now...the trees give us our seclusion till they fall , which will be real soon.
I have always loved gardening but had so many health issues and pain issues it became nearly impossible. ( a better dreamer planner than maintainer
)
This Spring I began to really get serious with my rose / cottage garden. Planting lots of perennials - so won't have to keep re-planting ea yr. I have so much more energy and health since losing weight. So now my dreams and imaginings are taking shape and this project has become my artist's palatte. It is a very happy undertaking for me.
One day I'll actually take some pic's and post them of my little "secret garden" refuge.
Wish you had some ground too, Bet you'd be wonderfully creative !

Pre-B: Protein shake (made w/ chilled coffee)
B: Cup o' joe, 1 hard boiled egg, 1 slice provolone
L: My 20 year anniversary with my company luncheon out at a restaurant called Capital Grill. I had mixed salad greens w/ blackened scallops in a mustard vinegarette and a cup o' joe afterwards. Delightful. (The salad had baby tomatoes and dried mango but I skipped 'em.)
S: Protein shake and maybe 1 slice provolone.
D: Will be take-outs from Outback with my friend Ingrid. I'm thinking about Alice Springs Chicken or perhaps more fish or steak. Dunno yet. So I'll have chicken, fish or steak and no taters - vegies on the side instead.
S: Protein shake before bed.
Vitamins: Got 2 doses of calcium to go.
Exercise: Tomorrow is another day.
Water: 40 oz in. Had tea before lunch (20-30 oz).

Finishing rock garden by driveway.
Planting 20 hosta's in rose garden.
Planting 3 butterfly bushes in rose garden.
Painting large antique birdhouse and placing post in hole in rose garden corner by arbor.
Wonderful joy of weeding and putting out weed killer.
Church Sat. eve, dinner out
Movie

Sunday so far free to PLAY!!!!, maybe even pull the bike out of the barn and RIDE ! WHEEEEEEEEE !
