Breakfast

Well...it has been some time since I have posted but I need your help.  I had surgery 4 years ago in August.... and I have put on about 15 pounds. Part of the problem is...I got married and my honey loves Carbs and I have not been working out.  Well...we have cut down on our carbs and eating more 'good' carbs and I have started working out.  My problem is breakfast.  I need to eat in the morning and I just can't find something fast and easy.  I do protein shakes every once and awhile but I like to 'eat' things.  What all do you eat in the mornings that is fast and easy?

Oh...and I don't like yogurt...I try..just don't care for it.

My quick fix for bfast is a protein bar.  Boring but quick and easy.  I get up at 2am for work and cooking is far from my mind at that time in the morning.  So protein bars work for me.

Other than that I eat muscle milk n oats but I dont reccomend it because its like glue.  High in protein but seriously lacks in the texture and flavor department.  lol 

Smart ones makes bfast meals.  I just bought the bfast quesadilla and some weird looking hot pocket sort of thing.  I havent tried them yet but the stats werent that bad.  2 minutes in the micro and voila!

A couple of quick breakfasts are:

Oatmeal mixed with some unflavored protein powder and fruit.

Ricotta cheese or cottage cheese sweetened with splenda and strawberries and pineapple

Egg Mock Muffins.  These can be made in advance and frozen and then popped in the microwave in the morning.

Brown your favorite meat choice (sausage, chorizo which is my favorite, ground turkey)
Fill muffin tin with about 1 to 1 1/2 tsps of meat..  Now add your favorite shredded cheese (also about 1 1/2 tsps.  Scramble eggs and add a touch of milk to the eggs and pour eggs into tinsto fill.  Bake at 350 degrees for about 15 minutes.

You can make these really with any fillings you want.  If you like only veggies, fine do that but cook them first before you actually bake the muffins.

To heat up just put them in an unsealed sandwich bag and put in the microwave and heat on high for about a minute.

They are.  I originally got the recipe from Luana and I've played with over the years.  And let me tell you, one of those is so filling you just can't eat more.  And when running out the door in the morning, they are perfect.

I'm the same way.  I recently discovered ProtiDiet Omelettes and Pancakes:

Cook the omelettes in pan, not microwave.

I could just make from scratch, but these are portion controlled and just add water.  No excuses..

Eggface has some really good recipes for mini quiche things she calls "Bites." I made one kind for breakfast about two weeks ago -- they had ham, cheese, green onion... she has many others.

Anyway, my non-WLS hubbie loves them. He's eaten more of them than I have. They freeze up well and go great in the microwave.
