Hi,
Hard boiled eggs work for me.  You can make a bunch ahead of time.  Do you like cottage cheese?  Cottage cheese with some berries is yummy too.

Well, first of all, I want you to know that I can relate to your situation. I had my surgery a little over 3 yrs ago, and have gained 20 lbs and am SCARED TO DEATH!!!! Carbs are the enemy I tell you. They are so bad for us, yet they go down so stinkin' easy!

I love my yogurt, but here is another thing that I make that is pretty quick and I love it.

I scramble and egg, put it on my plate, and then add a heaping Tablespoon of fat free cottage cheese, with a little pepper. Something about the hot and cold together, and the textures just really satisfies me!

My favorite tasty and very quick breakfast is... 2 scrambled eggs topped with marinara sauce and a little Parmesan cheese. If you want you can mix the eggs the night before put it in a covered container in the frig...do the same with the sauce (I use about a 1/4 cup this counts as one vegetable).scrambled eggs take no time to cook if you use a medium hot pan...now I do use a little butter I I hate margarine, like about a teaspoon to stop it from sticking and it tastes really good.. I have 1 pan that is ONLY for eggs and I use a heat tolerate spatula to stir in the pan...Yes, you could call me an expert, make that eggxpert. We "grow" our own eggs and there is only me and my Mom here and we get anywhere from 4-7 eggs everyday. And we both love eggs, me more than Mom.
Something else that is good. Small whole wheat tortilla, warm it in the microwave just till it is soft,add scrambles eggs cooked with green onion, green Ortega chili's and top with  jack cheese .
Roll it all up and put it in the frig, next morning nuke it for 45 second to 1 minute.I put a little hot sauce on mine sometimes too.Ymmmy.

You all are awesome...these are great ideas!  Carbs is my issue so I am trying to keep under 20 carbs per meal...hard to do, but I am doing it, except breakfast...but I am getting there.
