Spaghetti Squash?

I like to make meat balls (low bread crumbs, high in something like spinach...yum) and pour sauce and balls over spaghetti squash...Even dh loves spaghetti squash and he's italian (well, technically only half italian but still. LOL) .

We're gonna plant some next spring and cook and freeze it in serving sizes in zip lock bags...We love it.

Split in half, seeds scooped out, baked for 1 hour at 350. Then scoop the stuff out with a fork. drain or pat dry and serve or freeze it.

Yes, RNY worked for me but it also requires a lot of work from me!

I cook it first ,scrap it then layer it with marinara and mozzarella bake it until the cheese is melted. I also love it with just roasted garlic and olive oil. My Mom doesn't care for it but she decided it wasn't so bad after all when I fixed it the last time.
