Cookie Exchange

So I am going to a Cookie Exchange and most of the people there know I am getting ready for my surgery. But still asked me to come and chat and enjoy the time. So I made an older style cookies but I made some modifications and was wondering if any one of you Recipe savvy people could help me change it for after surgery when the time comes.

The cookies are a pudding style drop cookie.

4 ingredients

1 pkg - 4 serving JELL-O pudding (pick your flavor) [ I opted for the sugar free jello one in chocolate and one in Banana ]

1cup -  All-Purpose Baking Mix  [ I only had Bisquick on hand]

1/4 cup - Oil

1 - egg


Mix dry powders into a bowl stir in oil and egg, mix until the batter forms a ball. Shape into 36 small balls and place 2 inches apart on an ungreased tray. Flatten with the bottom of a drinking glass, and IF YOU WANT sprinkle with sugar [I opted to not]

Cook for 5-8 mins in 350*
let cook on wire rack.


So any of you savvy post ops got any information for me?




(BTW my son loved them without knowing they are sugar free LOL)

I always substitute canned pumpkin for the oil. You need plain/pure pumpkin though, not the pumpkin pie mix.

You can also take some portion of the flour/baking mix and use protein powder in its place. I generally will substitute about half of the flour with protein powder.

ETA some people use applesauce instead of oil. I use pumpkin because it has less sugar and a slight bit of protein, but sometimes you can taste it in the cookie.
