Hi Everyone,

I am looking for Demi Glace?  I have never used it and a recipe I want to use for prime rib / rib roast calls for 1 TBS.  Not sure if I can buy this at my local Stater Bros.  I have never even heard of this.  On the other hand, if I don't use it, will 1 TBS. really screw up my recipe?

Suggestions???

ooooh!  demi glace.  I've made it once, and I wouldn't want to do it again.  it's very time consuming, but the outcome is absolutely fantastic.  it's an expagnole sauce mixed with a beef/veal stock, sherry or red wine, sauteed vegetables that get strained.  It'll take a few hours to make, but you'll need only 1/2 a cup of it to garnish a dinner for a family of sayyyyy 4, maybe.  You might try to find a high end supermarket like Mayfair, or Bristol Farms.

The demi-glace makes the roast have the most fantastic taste.  BUT, it is a royal pain in the a$$ to make so I usually buy it at our local gourmet cheese shop or get it online.

I have also just kind of put stuff together and called it demi-glace.  I have used beef broth/stock and Kitchen Bouquet or worchestshier sauce and thicken it with cornstarch.  Throw in an onion or garlic or ????  Just use your imagination.  Create your own concoction!!

BTW, we are having a prime rib roast for Christmas.  I was sooooo worried about $$ and the fact that we would be feeding a small army (Jeff, me, Dust Gary, Phillip, Josh and Kayne).  The five boys are 17 and 19 so you KNOW they can EAT!!  I figured I would cook two frozen Stouffer's lasagna as that would be least expensive.  Then Jeff decides he wants to totally splurge and buy a big ole honking rib roast!!!  HE can afford that but I sure can't!

I have made prime rib before w/o the demi glace but thought I would give it a whirl if I could find it.  My prime rib has always been tasty and OMG left over rib eye burritos are to die for.  I am mexican so anything left over usually gets rolled up into a burrito.  LOL

There are only 4 of us here at home and doubt anyone else will be joing us for dinner.  Good thing becauce my table is in the garage and we will be eating on TV trays watching A Christmas Carol. 

Jill - I have a 25 yr old son and can he eat, my 19 yr old daughter does not eat much (to see her you would not know that) she is a fast food junkie.  My husband can power house any kind of food but since I had my surgery his food intake has cut way back and it shows.  He is down 40 lbs. +/- since Jan. 1st with WW.  I am so proud of him, his sugar is under control.

I can't afford a prime rib just because but, since we did bonus at work, company gift tonight is cash, and received my Christmas check from my dad I am going to go ahead and buy a big one.  I can freeze any left overs and have instant protein for lunch.
