Not sure if its an actual WOW moment...
But it made me feel pretty damn good....
So hubby and I went on a bus day trip to Reno today. Through out the day I got to watch hubby and our family grub down on some yummy looking food, while I stuck to my tofu and veggies.
Well hubby wanted to go into the Harley shop to buy himself a shirt. While in there I was browsing through the women's clothes, knowing that I cant fit into anything in the woman's section. I found this awesome sweatshirt, and fell in love, so I tried on a 1X AND IT FIT!!!
Ohhhhhh my tofu and veggies were soooooo worth it! (of course I made hubby buy it for me!)
I love my WLS!

I put it in any soups. Made a quick soup the other day.
1 can chicken broth
1 bay leaf
1/2 shredded carrot
a little shredded cabbage
a lot of black pepper
4 oz tofu
Then I tried a recipe from one of the WLS cookbooks which was very good. Here it is with my comments. I seem to have a hard time making things exactly as I see them. lol
Tofu Tika
“Eating Well After WLS” by Levine and Bontempo-Saray
1 large clove garlic, chopped
½ tsp fresh ginger, grated
1 small red chili, seeded (I used some powdered cayenne)
½ tsp cumin
½ tsp ground coriander
½ tsp turmeric
½ tsp garam masala
1 C plain, fat free, yogurt
2 Tbl lime juice (I'm use 1 Tbl next time)
1 lb extra firm tofu, drained and quartred
cooking spray
½ C FF vegetable broth
1. In a food processor, combine garlic, ginger, and chili. Ptocess until finely chopped. Add cumin, corriander, turmeric, garam masala, yogurt, and lime juice and blend into smooth paste.
2. Place yogurt mixture in shallow bowl and add tofu, stirring to coat completely. Cover bowl and chill at least 4 hours.
3. Twenty minutes before cooking, remove tofu from refrigerator and allow to come to room temperature. Remove tofu from marinade and scrape off excess, reserving marinade.
4. Coat a large, non-stick pan with cooking spray and saute tofu over medium-high heat, turning once or twice, for 15-20 minutes, until nicely browned. Remove tofu from pan and cut into 1 inch cubes. (I would brown this less so it goes down easier)
5. Over medium-low heat, de-glaze pan with vegetable broth, scraping up any brown bits. Add reserved marinade and tofu and simmer for 3 minutes.
Makes 4 servings.
