What's for Dinner???

Hey Everyone,

Hope you all had a great weekend!  I know I got some excersize in, walking all over the mall!  hehee 

Tonite for dinner is easy.. Over the weekend I made a big ole pot of elk chili.. and that will be dinner tonite!  I'm going to make some polenta to go with it and sautee some zuchini and viola!  We've got a meal!!!

What about eveyrone else???  What are you all having???

I made split pea soup yesterday and it is still calling my name.  There was a bunch left over, so I will eat a bowl and freeze the remainder tonight.

Taco Soup. It is so cold that is what we are having.  Its been simmering all day

We are having one of my all-time favorites!  It's quickly become one of my family's too!

Taco Pot Pie

Line a caserole dish with pie crust.

Cook in a frying pan

1.5 # of very lean hamburger or ground sirloin
Season with taco mix
Add 1 can of fat free refried beans until warm and "melted"
Add shreded cheese and melt in.

Pour in the pie-crust lined caserole dish (sometimes I just use a big ole huge tortilla instead of pie crust)  Put a top on, and bake until crispy. 

I don't eat the pie crust (or much of it) but I do like the insides.  Yummmmmm

I am being very lazy and I am going to go to our local Mexican restaurant and get a bowl of Abondigas soup.  I just love their soup and it is so tasty.  My kids are having chili, but as much as I love chili, beans for that matter, they make me a musical instrument and it can get embarrassing in a crowd!  TMI  Sorry,
