So...as many of you know (and probably, just as many of you don't) I am a chef. One of my pet projects ever since I got serious about my WLS journey has been to take my favorite recipes and adapt them so I can eat them. I have been writing them down and keeping them all together in a little WLS cookbook binder thingy.

Well, one of my friends was taking a look at them the other day and suggested that I snazz it up, submit it to some publishing houses, and try to market a WLS cookbook to the mass market, seeing as how WLS is getting more and more mainstream.

Why am I telling you this?

I need more recipes! I am hoping that you guys have some great recipes that you use on a regular basis and love? I will credit whoever sends me recipes in the book!

Proceeds from the book (if there are any?!?!?!) will be going to charity, so there is no pay coming to anyone who contributes, I want this all to come from the goodness of all of our hearts! I am not 100% sure which charity/charities yet, but the point of this book is not to make money, it is to spread some good into the world and produce a resource for other WLS patients.

Also, I wanted to include the taco soup, does anyone know whose recipe this was orginally? I don't want to go using one of you folks's recipes without your permission and without giving you credit for it!

So, bring them on folks! Send me your favorite WLS friendly recipes!

Shells, I do not know where the Taco soup recipe originated.  I know that Stephanie has posted it, but I have also seen it on other sites.  One is recipecal.com  That site is gives the cal, carbs and protein counts.  Any other WLS friendly recipes I have, I have gotten from WLS cookbooks.  Sorry I cannot be of more help.

Mock Muffins.......

Use any kind of meat you can handle, cook and season, drain any oil/grease off.

Place a bit of meat in the bottom of the muffin tin, sprayed with cooking spray. (Note: Do not use muffin papers)
Add cheese of your choice
Fill muffin bin with egg beaters or beaten eggs, Leave room for the mix to rise, so do not over fill.

Cook on 350 degrees for 15 to 18 minutes. Let cook and remove from the tin. As the muffins cool they will pull away from the tin, making removal very easy.

You add anything that you like, like onion or mushrooms or anything you like with your eggs and can handle.

I love them and one is more then enough for me as a meal.

I love this--- I am much to new out to have been creative yet---but YESTERDAY I was looking all over this site for the taco soup recipe!!! WHere is it??? My favorite so far is eggface's baked ricotta----I added mushrooms, and grated zucchini---- even a turkey meatball----- My not wls DH loves it too!
     I'll keep an eye out for the cookbook---and if you have a copy of the taco soup---I know it's been posted many times---- I'd love to find it!
