I'm a little late here! LOL

I am not a veggie but I don't eat a lot of meat...never really have, although I have been on a chicken kick lately??? lol

If you are in the market for good veggie cookbooks, see if you can find any of the Moosewood Restaurant books, they're all GREAT.

I do a lot of the soy stuff myself, and I LOVE tempeh and a few of the other "fake meats", just start buying them and trying them, just make sure you get a small package until you are sure you like it! I have been substituting TVP for ground beef in tacos and chili for years and most of the people I cook for don't realize it until I tell them.

I have a couple post-WLS friends who are total vegetarians, it definitely takes more work to get all the protein in, but it CAN be done, especially if you are going to keep eating fish and dairy.

My family and I decided to become "vegetarian-light" (we eat seafood, dairy and eggs) for the month of January.  Thing is, we realized in the first week that it is REALLY easy and tasty.  So far we have had soy goulash (mmmmmm), shrimp & peppers pita pizzas, vegetarian chili, bean burritos, creamy tomato pasta with sauteed veggies, fish tacos and fake-chicken burgers.  It has been pretty great actually - lol.  We had already tried the soy crumbles (like ground beef) and the fake chicken patties a while back just from trying different things.  I say - go cruise Trader Joes and the natural food section at Safeway and experiment with protein alternatives to meat - there are some great ones out there.  There are a couple we didn't like (ground beef alternative in a tube-ick) - but most are very good.
