A Terrific Recipe - Baked Oatmeal

I found this recipe on the recipe board and loved it ... so of course I wanted to share it with you all. (I used splenda, a lot less oil and carb countdown) I am planning this for Christmas morning breakfast. I hope you all enjoy it as much as we do. Hugs, Tammy BAKED OATMEAL 3 cups oatmeal (quick cook or regular-whole) 1 ¼ cups milk 2 eggs ½ cup oil 1 cup sugar 2 teaspoons baking powder Pinch salt Mix everything together and put in a 9x13 cake pan. I sprayed my pan with Pam first so that it would not stick. Alterations: I substitute sugar with Splenda, and add a little more milk and less oil. You can also add cinnamon. This is a great recipe. Made a couple of modifications though. I used soy milk, less oil, less Splenda, added pecans (crushed), and cooked in cupcake tins so I can freeze them and pull them out of the freezer for snacks. I also added four scoops of protein powder for added punch. Cooked these for 20 minutes and I tasted one about two minutes ago. You have provided us with another winner. I'll probably take these with me to have when everyone else is chowing down on my wife's cinnamon buns (homedmade) tomorrow morning. Merry Christmas.... Rob

Hey Rob ... I am having this for Christmas morning breakfast. Think I will use the changes you made (except for the soy milk - I don't have it in the house right now). Sounds even better the way you made it. I was thinking of trying to add protein powder the next time ... thanks for letting me know it worked fine. I also made it with applesauce instead of the oil and it was pretty good, but did change the texture a bit. At any rate, I think it is an excellent base recipe that we can spice up as we see fit!!!! Hi Tammy This sounds delicious. I wrote this one down to have once I get off the pureed foods using the changes that Rob suggested. It sounds like a great breakfast for a cold winter morning. Question: Does anything happen to the unjury protein powder when it is used for a recipe that requires baking in the oven? Merry Christmas Rose
