I have made it many times.  My kids love it.  For the kids, I make a spanish rice and serve the chicken with warm tortillas. 
Don't skip the cream cheese, it makes the whole dish come together.
This recipe also freezes well.

Southwest Chicken

2.5 lbs chicken (1 bag frozen boneless skinless chicken breasts)
1 large jar salsa
1 can black beans (drained and rinsed) 
1 can corn (or use frozen)

1/2 hour before it's done cooking, add 1 brick cream cheese on top and let it melt.

Let it cook on low for about 10 hours or on high for 5-6 hours. The chicken will be so tender it's falling apart and shredded. 

Eat it plain with a side of veggies or salad.  Or use the chicken as a base for chicken tacos and top with lettuce and tomato or as quasadilla with cheese on a low-carb tortilla.

Judy, Thanks for the ideal. Since surgery I don't like BBQ sauce but I love the dry stuff. Not as sweet. That is one taste change I had. Odd isn't it?  See you lighter. Joanne

Before surgery, I could imagine myself in front of ALL of them!  Especially the B & J ice cream!

Rob this sounds yummy!

Joanne, you could shred the chicken and mix with a BBQ sauce and have a bbq chicken sandwich.

We missed you at the Victory meetings.  Hopefully we'll get something new started after the summer.  Good luck to your daughter's pending surgery.  She has some great mentors so should do fine.

All you had to do was ask.  This is a family favorite.  It's great as a leftover.

Hot Chicken Salad

  2 c. cubed chicken
  2 c. diced celery
1/2 c. lite mayo
1/2 c. yogurt
1/2 slivered almonds
  2 T. lemon juice
  2 tsp.grated onion
1/2 tsp. salt
1 1/2 c. grated cheese (optional)

Combine ingredients and put crushed potato chips on top (also optional)
Bake at 350 degrees for 25 min. or 450 degrees at 10-15 minutes.

It could be worse.  The cheese steak is actually looking like a nice alternative compared with these posted in USA Today:

In Georgia, you can get what's called a Luther Burger, supposedly named after singer Luther Vandross. It's a ground beef patty topped with bacon and cheese, sandwiched between two Krispy Kreme doughnuts instead of a bun.

In Iowa, there's a hot beef sundae, which made its debut at the Iowa State Fair a few years ago, O'Connor says. It's mashed potatoes, roast beef, beef gravy, cheddar cheese and a little cherry tomato on top to look like a cherry on a sundae.

In Vermont, there's Ben and Jerry's "Vermonster," whi*****ludes 20 scoops of ice cream, hot fudge, bananas, cookies, brownies and any other topping you could possibly want.

In Connecticut, diners at Doogie's can get a 2-foot-long hot dog on a roll with onions, chili, cheese and bacon and a side of fries.

In New Mexico, recipes for a Frito pie vary, but most include Fritos corn chips, beef, beans, onion, cheddar cheese, lettuce and tomato.

Can you imagine even sitting in front of one of these.
