Hi Debbie, myself and Denise miss seeing everyone from the Victory meetings. I'm going to try to post and not just read the posts to help get the Delaware board active like it was when I had my surgery in 2004.

Surprize Guys ! Look Who's popping in to do roll call ! Yes it really is Debbie and Buster checking in from Lower Slower Delaware (as Mom says). This is my first time on but I promised Mom I would help get this board going again so here I am with Mom's grand-dog Buster. Who wants to join me in helping to get the board going. Anyone have any good recipes for chicken? I cook a whole roaster chicken and get several meals from it. Right now I have a whole half cooked. Any ideals what I could make with it. Rob and Judy this is your department of exellence. Anyone else any ideals. Please Post ! See you lighter. Joanne

Topic: Newbie Recipe: Baked Ricotta
This was (and still is) my favorite recipe for early out.
Baked Ricotta
16 oz. Ricotta (I use Fat Free)
1 Egg
1/4 c. Parmesan Cheese
dried parsley
pepper
Mix the above ingredients.
Grease a glass pie plate. Add a small amount of spaghetti sauce, swirl around.
Add all of the ricotta flatten in the bottom of the pan. Sprinkle shredded mozzarella cheese.
Add more spaghetti sauce on top.
Bake 350' for about 20 - 25 minutes.
My kids even love this. Its just like eating the filling of a stuffed shell.
Now if you are really inventive, you can use this mixture (along with sauce and mozz) and layer it with partially steamed veges like squash or egg plant and have a vege lasagna. Just adjust cooking time. YUM!
This freezes well if you want to make separate servings in individual custard cups.
Also can be microwaved instead of baked.
