Grits
I suppose there are several varities but I just eat plain old homny grits...ground up corn. They are normally cooked in water till they thicken and in the South we add lots of butta, cheese, shrimp, hot sauce, bacon...anything that you want.
Are you familiar with cream of wheat...similar but from corn.

I made the mistake of trying grits (my first time, no less) a few months out at Denny's .. I figured it was the better of the options (which were pancakes or biscuits, IIRC) .. Gave me bad bloating and gas later .. ugh! I thought that was odd, since they are made out of corn and we can usually tolerate corn products O.K. (e.g. Cream of Wheat, tortillas, hominy, nacho chips, etc.) It might work for me now, being 1 1/2 years out, but I haven't tried it again ..
