My favorite thing of the moment: buying a plastic tub of mini marinated mozzarella balls. Pop in a few grape tomatoes and bam, instant Caprese salad with (for the amount I use) 27 grams of protein. 

I made this yesterday in 2 minutes before running out the door to work and it was delicious.

Halloom cheese - fried up in olive oil with peppers, onions and mushrooms or added to kebabs along with chicken or beef - I LOVE this cheese!

Bocconcini balls like Jenna just described.  I add them to salads with chicken and nuts, or eat them as a late night snack with olive oil and balsamic vinegar.

Chicken breasts cooked in olive oil, garlic and red wine with mushrooms and onions.  Drool.

Easy-peasy:  low-carb bread with butter, melted cheese and crispy bacon 
                 :  open-face sandwich - egg salad, fried egg, tuna melts

Meatballs in a crock pot with spaghetti sauce and cheese.
