Lit'l Smokies recipes?
I use a similar recipe for meatballs and have been fixing them on the weekends and then freezing them in little bags in single portions for snacks. I use the frozen italian meatballs from the store, 1 jar of chili sauce, 1 cup of grape jelly, and 2 tsp of dijon mustard. Put in the crockpot for four to six hours on low and enjoy! Yummy. I'll have to try this for lil smokies sometime.
This is a little bit carb-heavy, but it's one of the treats I'll be enjoying this weekend myself!
Little Smokies
Largest flour tortillas you can buy
Honey mustard (must be honey mustard. NO SUBSTITUTES)
PepperJack Cheese
Take the little smokies and use them as guides to cut strips of tortillas. I use the ginormous burrito-size ones (Gurerros brand seems to be the thinnest on the market) and usually cut a total of six strips. The center four strips you cut in half, and then trim some of the ends off the two side pieces.
Cut up the pepperjack cheese into strips that are as long and wide as the little smokies and about 1/4 to 1/3 of an inch thick..
Spread a thin (or thick if you like it!) layer of honey mustard on one side of the tortilla pieces. Roll up a piece of the pepperjack cheese and a smokey inside like a pig-in-the-blanket. Stick on a skewer. Keep going until all little smokies are used up. For a small package with 6 smokies per skewer, you'll end up with about six skewers. (Can you tell I make this alot? Hee!)
Now comes the fun part. You can use a grill and toast them on the grill, turning them back and forth until browned and the pepperjack is starting to get melty, cook them on the stove in a large pan that's wide enough for the skewers to fit on. Or if you're lucky like me and have a burner that has a pancake grill on it, use that. Just make the tortilla slightly brown and crispy and the cheese melty and you're good to go. You can even "hold" them in the oven at 225 for about half an hour to make sure they all get done.
