I've added up to 3 T of oil to this cake, so feel free to pour it on in if you dare. I'd try doubling the oil. The reason I went on the conservative side was for elimination of high fat gastro symptoms of those that may have them.

Oh I am glad you mentioned that. I can't GET enough fat in my diet. Woo Hoo. I am SO thrilled that this has no gluten that you can't EVEN imagine.
