recipe of the day!

I have read so much about people getting tired of eating the same old thing, or if your like me just some days your tired of eating in general! I have found a GREAT and wonderful cook book, that I have been using! I figured I would post a new recipe every day to share with you guys along with the stats on that meal. Some of the recipes are of my own creation. If I post one that is not my own, I will be sure to give the credit to the owner!
This recipe actually came from Dana Carpender and her Law Carb Cook Book, 500 great recipes!
Cat's Chilli.
1/2 Bell Pepper diced
1/2 Vidalia or other sweet onion cut into chunks
1 teaspoon minced Garlic mmmmmm or more if your like me, I use one large clove.
2-3 tablespoons olove oil
1 pound ground turkey (or you can use ground beef or ground chicken, your choice, I personally like the turkey)
1 15 ounce can diced tomatoes with green chillis.
In a large heavy skillet sautee the pepper, onion and garlic in the olive oil. Add the turkey, being sur to get it evenly browned and crumbled. Then add the canned tomatoes and one can of water. Simmer for 20-30 minutes, until it starts to thicken up. You can then add as garnish for additional flavor if you like, red pepper flakes and/or ground ginger to your taste.
If you like you can also add to the chilli, shredded cabbage, sliced zuchini, or green beans. This will serve about 3 people.
Each serving will have 272 calories, 13g of fat, 28g of protein, 11g of carbs, 2 g of dietary fiber which brings that down to only 9 grams of usable carbs.
