Recipe of the day.
I love omlets and scrambles so here is a scramble I do quite often when nothing else wants to sit well with me.
1/2 cup sliced mushrooms (I use fresh)
1/2 cup ham cubes
1 teaspoon of butter
4 eggs
3/4 teaspoon dried dill weed
1/2 teaspoon lemon juice
4 scallions (green onions) sliced 1/4" thick.
In a small to medium sized non stick skillet start sauteeing the mushrooms and ham cubes in the butter. While thats going on mix your eggs with the dill and lemon.
When the mushrooms are limp and have changed to that darker color add the eggs and sliced scallions to the skillet. Scramble until set.
This has aprox 200 calories, 14 g of fat and 18g of protein. with 5g of carbs.
