Sure Gail - it is actually shockingly easy! I went to Baugher's 2 weeks ago with the kids and picked apples and they gave us recipe cards. But basically you core, peel, and chunk up about 8 apples, put them in a pot and cover about the bottom 1-2" of the pot with apple cider (depends on how thin or thick you like it), cover it and cook it on low, stir occasionally til they all mush up. Then you add cinnamon and splenda to taste - I don't use measurements, must be the Greek bloodline! ;)
I haven't heard of TVP. I bet it would be good to put into soup. I make soups all the time. I recently made a pot of chicken vege soup. I had baked a chicken and took the left overs for soup. it was awesome. I have some in my freezer for this fall and winter.
