I Finally Did It!
I love to make homemade mac & cheese. However, my original recipe is loaded with lard, whole milk, and butter. So good yet so bad.
Anyway....last night I finally did it. I created a cheese sauce that was so low it fat and it tasted like my disgustingly fattening original. Instead of making mac & cheese though, I took some turkey breast, broccoli, sauteed onions, and brown rice with whole wheat orzo and tossed it all together. Much healthier than heavy noodles.
I'm a genius.

I'm a little bit of this and a little bit of that type of girl in the kitchen. I only measure when I bake, lol. I cook to taste. I will try to write what I think are measurements of what I did.
Ingenius Low Fat Cheese Sauce:
1 cup of small curd fat free cottage cheese
1/4-1/2 cup of skim milk (may need a little more, depends on consistency)
1 egg
1 and 1/2 cup of cheese (I used white cheddar, mozzarella, colby jack, and parmesean) (you can use more or less depending on taste and you can experiment with the different types of cheeses)
4-5 cloves of chopped garlic (I love me some garlic)
Black pepper (a few shakes)
Place the cottage cheese and milk in the blender. Start with 1/4 cup of milk and add more as needed. Pulse until the consistency of sour cream. Put the remaining ingredients in the blender and pulse until thick and creamy.
That's it, that's all there is too it. Use the sauce in whatever recipe you want. If you want to pour over veggies, just put it in a sauce pan to heat up. If you want to make the mac & cheese just mix in with the noodles and bake in the over, etc., etc....
