Sugar Free Fiber One PB Cookie Recipe

I started eating Fiber One Cereal because of the huge amount of fiber (14 grams and only 60 calories).  I like to eat it plain because it's crunchy and tasty.  Yesterday I was home and decided to try and come up with a way to make cookies using the cereal.  They were super easy and very good.  They were a little crumbly though.  I have to admit, I liked the dough before it was cooked.  You could leave the egg out and form the dough into balls and refrigerate.
1 cup peanut butter 1 cup Fiber One Cereal (original) 1 cup Splenda 1 large egg Mix peanut butter, splenda and egg together until thoroughly combined. Incorporate cereal and mix until all is coated. Bake at 350 degrees until brown on top. Cookies will be slightly crumbly. I am going to have to try this.  Wondering about adding some any whey non flavored protien?

Sweet!!  I really liked them before they were cooked too.  Good both ways.  Glad you liked them.
