Topic: Revision to What's for supper
Well guys, I had my menu all planned out and I got into the kitchen and found a bag of frozen broccoli. So, I decided to make broccoli and cheese casserole....good choice!! I made it with out the rice. It was sooooo yummy!  We had grilled ham steak, broccoli and cheese casserole, corn on the cob and dh had a roll with his. We had a really good supper! The broccoli and cheese casserole hit the spot and there is enough left for lunch tomorrow (for me) and a family repeat later in the week.

Broccoli and Cheese Casserole

1 bag frozen chopped broccoli
1 med. sweet onion, chopped and sauted
1 jalepeno pepper, seeded and chopped
1 can 98% FF cream of mushroom
1 cup lf mozzarella cheese
1/2 cup lf velveeta, melted
8 ritz crackers
I can't believe it's not butter spray
salt, to taste 
pepper, to taste


Preheat oven to 350 degrees. Boil broccoli according to directios on bag. Saute onion in a little butter. Melt  cheeses in microwave while onions saute. Drain broccoli well. Add broccoli, onions, hot pepper, salt and pepper to melted cheese. Spray a 9X9 glass baking dish with pam. Pour broccoli mixture into dish. Top with crushed ritz crackers and spray with a little I can't belive it's not butter spray. Place in a 350 degree oven and bake until bubbly. Allow to sit 5 - 10 minutes before serving. Will thicken as it cools.

We are having grilled ham steak (yum, yum), green beans and corn on the cob. Dh is having rolls and baked beans. He doesn't llike green beans. Hope all is well. Have a good evening!!

Pickle Barrell! Now were talkin! Lets see 4 miles east of WalMart, you must be pretty close to the little gas station there by Mr. Michel's farm..I think there is a car lot there now where Strickland buildings used to be. My Brother lives there on Hatley rd..You look so familiar too...I would ask what your last name is but you may not want to display that on the Internet..you could PM it to me though. I'm sure we know alot of the same people..pretty cool to live this far away and hear from a home town gal...Take care..and maybe I'll see you at the RR fest in April after Ive lost a couple hundred pounds..:) ......Joe Hodges

Topic: Whewww, I'm pooped!!
Today was the Annual Bear Creek Festival and car show in our town. We had a food and information booth for where I work. I got up at 5:30a, only after going to bed a little before 1:00a, did some things around the house. Left for the festival, worked at our booth until 3p ( I was the booth organizer, so I had to be there all day) and got home a littel after 4. We had a really good time, we sold popcorn, cotton candy (that was an experience within it's self..lol), drinks and homemade goodies. All the proceeds from our booth go the Patient Care Fund to assist with the purchase of Christmas gifts for our patients, along with small home improvements, clothing (if needed), emergency groceries, final wishes when possible (I work for Heart to Heart Hospice), birthdays etc. I got on here to unwind and see how you guys spent you day. Hope everyone had a wonderful day. I know we did!

Thanks for your support... When I get cought up here at work maybe I can find the time to chat. Where are you from?  I need all the support I can find. And it is nice to have someone to talk to that has been there and done that!!! I will keep u up dated on it all.  I will take my lap to to Mexico soo I will be on here to update!

I hate that i missed this meeting...... by one day of course... i am a day late and a dollar short!  Do they have the group once a month??  And do you know if they would allow me to attend even tho i am to be banded in mexico

Please keep me posted on your mexico dr and how you do. My son has been looking into this option. I'm sure you will do well but we have to follow dr instruction to the letter to keep problems from occuring. please contact me if you would like to talk. GOOD LUCK!!!
