Topic: Good Morning!
Good Morning Mississippi!! I hope everyoen had a good weekend! We attended a cookout for my brother in laws 50th birthday last night. We had a nice time. I suppose this will be the last family cookout for the year. I usually grill all winter, we just bundle up and brave the cold. I love me some grilled chicken and fish....lol!! I am sitting here with my coffee, trying to think of something I can toss into the crockpot that will be ready for dinner when I get home. My creative cooking side is still asleep...lol! I am going on a search for some new crockpot recipes. When I find some worth sharing, I will post them for all to try. Have a good day!

I got up feeling all Betty Crocker this morning...lol!!! I made Jam Bars and Sausage Casserole for dinner tonight. Plan to serve the casserole with soem green salad and rolls. Recipes follow:

Sausage Casserole

1/2 lb turkey breakfast sausage
1/2 sweet onion, diced
1 can mild ro-tel tomatoes (do not drain)
1 can 98% FF cream of mushroom
Wheat Pasta ( I use Rotini style)
2 oz light velveeta, diced into small squares)
balck pepper, to taste

Preheat oven to 350 degress. In a large skillet, brown crumbles sausage and onions. Drin and rinse well. Return to skillet, add tomatoes (juice and all), cream of mushroom soup, diced velveeta and black pepper. Over medium low heat, coo****il cheese melts and cheese and soup are blended well. While sausgae mixture is cooking, boil pasta in sal****er. When done, drain and return to pan. Add sausage mixture over pasta stiring well. Spray a 9 X 13 glass dish with pam. Pour sausage and pasta mixture into dish. Top with a sprinkle of cheddar sheese. Bske until bubbly and cheese is browned slightly.

Jam Bars

1 cup naturally sweetened preserves or jam (such as Pulaners All Fruit, most of the time, I have used sugar free smucker. It works just as well but  leaves a slight after taste from the artificial sweetener))
1/2 cup butter
2 eggs
2 tsp vanilla
1 cup wheat flour (I use regular if I do not have wheat)
2/3 cup oatmeal
1/2 tsp cinnamon
1/2 c fruit optional (such as blueberries)

Preheat oven to 350 degrees. Beat eggs, mix in room temp jam and butter. Mix together dry ingredients, addign to we ingredients. Stir well. Pour into a sprayed 9 X 9 or 8 X 12 for thinner bars. Spread evenly in pan, bake at 350 for 15 - 20 minutes depending on pan size.

Hope you enjoy the recipes.

I think I will just sit back and let you try those.  LOL.  You can let me know how they are.  I haven't been on here much this week due to work being so hectic and having family staying all week from Alabama, but I hope you've had a good week and will have a great weekend.

Broccoli Pancakes

Description
Even if your kids don't like broccoli, they will eat these pancakes. You can serve them as a side dish, however they are certainly a meal on their own if you want to serve them as an entrée. Broccoli and other cruciferous vegetables including cauliflower, Brussels sprouts, cabbage, turnip greens and kale are rich in antioxidants, which help protect against both cancer and heart disease.

Ingredients
1 large head broccoli
1/4 cup coarsely chopped onion
1/2 small hot chili pepper or 1 teaspoon chili paste
1 large garlic clove, peeled and sliced
1/4 cup vegetable oil
2/3 cup whole wheat pastry flour
1/8 teaspoon dried dill weed
1 pinch salt
1 large egg or 2 egg whites
1/4 cup low-fat milk
A sprinkling of paprika

MOCK SOUR CREAM:
1 cup plain non-fat yogurt
1 tablespoon freshly squeezed lime or lemon juice
1/2 small onion or large shallot, finely chopped
1/2 teaspoon Tabasco sauce, or to taste
Sprinkling of chopped fresh dill

Instructions
1. Cut the florets off the head of the broccoli and separate them by cutting the large ones in half so they are all more or less the same size. You should have about 3 cups. Discard the stalks, or save them along with any remaining florets to use in soup or a vegetable stir-fry.

2. Bring 1/2 cup water to a boil in a medium pan, then drop in the broccoli florets, cover, and let steam as they cook, for 3 minutes. Strain in a colander.

3. Put the steamed broccoli, onions, chili and garlic in a food processor and pulse on and off to chop (do not puree the vegetables), or chop by hand. Transfer the chopped ingredients to a mixing bowl and stir in the oil, flour, dill, and salt. Add the egg or egg whites and milk and mix thoroughly with a wooden spoon.

4. Smear the bottom of a large, nonstick skillet with 1/4 teaspoon of butter and set it over medium heat for about 1 minute. Drop tablespoons of the batter into the hot skillet, placing them far enough apart so that the pancakes don't touch, and cook over low to medium heat for about 1 minute. Turn the pancakes and cook the other side for 1 minute. Transfer them to a hot platter to keep warm while you continue making the rest until all the batter is used up.

5. Mix all of the ingredients for the Mock Sour Cream together and spoon 1 teaspoonful on top of each pancake, then top with a sprinkle of paprika.

Makes 20 1-inch pancakes - 2 per person.

Topic: What's Up??
Good evening and how is everyone? I haven't posted since yesterday morning....been real busy! We had a great day at work! Heart to Heart Hospice (the company I work for) hosted a pep ralley at a assited living center where we have several patients. The high school cheerleaders came over and did cheers and a dance for them. The local tv station came and filmed it. We put face tattoos (#1, BIg Red, Cardinal Heads etc) on al the residents and gave them pompoms. All the residents were dressed in red or blue (our school colors).  We practiced "GO Team GO" before the cheerleaders arrived. The residents had such a wonderful time! So did all the adults! After the pepralley, we served them grilled hotdogs, chips, dip, baked beans and cookies. We also watched a game film after supper.  It did my heart good to see them have such a good time!!! I love what I do, how about you??
