What Do You Eat For Lunch?????

I have as of lately, found a great fondness for Mexican type stuff... Baked tostitos with bean dip or refried beans, salsa, or veggies... A small homemade burrito with many of the same ingredients and turkey burger with taco seasoning.. A taco salad.. again with a lot of the same ingredients... just variations of how much of what on what day. Tomato soup is still a favorite..  as is over easy eggs..  YES, I work @ home lol sorry for all those that can't Hope this inspires so of you to find your inner SALSA

I eat a lot of tuna.  I LOVE the teriyaki (sp) tuna fillets you can buy ready to eat in the pouch.  I can eat almost the entire pouch which has about 30 grams of protein and almost no fat.  Or sometimes I will eat about half and have some veggies like green beans (my fav) or a small side salad with it.  They are real convenient and you can heat them up or eat them right out of the pouch as is.  I also make my own egg salad and will have that with a few wheat Ritz crackers. I like stuff that you don't really have to "fix".  A lot of times I will just bring left overs from dinner the night before.  I make some killer chili beans and that is always better the second day so that is something I do often too, especially when it's cold outside!  Top them off with some lf cheese and ff sour cream and yummo!!!!   If I am in the mood for some "fast food", I like to get one of those grilled chicken snack wraps from Mickey D's with only the chicken and cheese.  Cheap and delicious! I love threads like this.  It's good to see what others eat!

What do I eat for lunch? In 1 word: LEFTOVERS   LOL I still have not grasped the smaller cooking portion. My eating is smaller portioned but  my cookies isn't. ALso I get tuna and salmon lunch packs from SAM's Just today I had Shrimp with Lobster Sauce from PF Chang's (3rd meal out of that). Yesterday I had a homemade Chimichanga (Mission Valley Carb Smart Whole Wheat tortillas baked stuffed with low fat cheese, left over chicken diced up, tomatoes, black beans, onions, green chili's and salsa). Last Friday was Shrimp butterflied and stuffed with cream cheese, crab meat and diced jalapenos's wrapped in lean turkey bacon and broiled (prev night dinner left over). Homemade seafood gumbo last week (froze the rest). I just pack up what ever is left over in the fridge into my lunch box with water and snacks and march off to work. LOL My co-workers are generally jealous of my lunches. And surprised apparently - They keep asking me "Are you allowed to eat that?"

Have you tried making chili and freezing it in small containers.   I made my Super Bowl Chili this past weekend and froze 6 little containers of the left overs.  I can take them out and by lunch time they are defrosted and ready for the microwave.   I usually stick some extra shredded cheese or some sour cream in a bag and squirt it on after I heat up the chili.   Chili will keep in the freezer for a couple of months.

I get bored with lunch too.  I am always so busy and on the go that I usually do quick things.   I love the ham and cheese/cracker lunchable from walmart (the small one $1.59 with no cookies in it).  Plus it has 20 grams of protein in it.  I can't eat the whole thing but I usually fini**** before I go home.  I also love the frozen meatballs.  I slice about 3 of them and then put shredded mozarella cheese on top.  Microwave for just a few seconds and it is heavenly.  Fast too.   Great post by the way!!!!!   I so wish I could eat chicken salad.   I loved it before my surgury but now it makes me very sick.  I have been scared to try it again.   Donna

I love soups mostly protien rich soups like turkey soup or bean soup which I make and freeze in small containers. Many times I will have a few crackers and my own deviled chicken spread with about 6oz of soup. If I dont have chicken I will have some nut butter on crackers. Actually Lee came up with the nut butter idea. He bought a can of assorted nuts put them in the food processer and grind the nuts till they are smooth. This is a staple at our house now. I dont do much nut butter mainly because of the fat content. Today I plan on having lettuce wraps at my favorite chinese place there is always enough to split with someone or bring home the leftovers.                                                    Annie I would like to try lo carb wraps but havent done them yet.

This is funny, I found this thread as I sat down here to eat my lunch!  It is 3 slices of cracker barrell cheese with 3 saltines.  Before I hit the road again I'll eat a yogurt (blue bunny or light and fit)- I now it's lemon anyway.  What a beautiful day it is today!!!!!!!!!!!!!!!!!!!! Nancy

I'm reading this as i'm eating my lunch!!!  I'm having white chicken chili left over from last night's dinner.  I seem to almost always have leftovers since i'm having a hard time learning to cook smaller portins!  BTW: this chili is the BEST i've ever had... it's a recipe i got right here!  I think it was one from Aunt Dee... You Rock, Aunt Dee!!
