As a guy its hard taking advice from a lot of women but you have gone thru the same things I have so its not a "Guy Thing" completely. Most of the same issues are both guys and gals. So I will gladly take advice from my WLS sisters.

I had to do a 6 month supervised diet (and I really didn't do a great job) then an 8 day liquid diet. I used Slim Fast and Carnation Instant Breakfast but I would not recommend that long term. It's really crap. OR order some protein that would like to try for your post op period and use that. I really, really wish I did a better job pre op!
I agree with everyon eelse.. Some of my 'baby step'changes I took were:
removed caffiene from my diet (I drank way too much coffee)
sipping water/caffeine free liquids throughout the day (workin on that magic number of at least 64 oz.each day)
avoiding drinnking a lot of fluids with meals (take a few sips only)
chew food throughly....till the consistency of oatmeal....
eat your protein first -- and try to go for lean meats. Avoid the breads.
