Xpost- Pics and Review of Carbquik Toll House Cookies

Hey everyone!
It's raining, its cold, it's a day that screams comfort food... So on the stove I have a huge pot of homemade spaghetti sauce and meatballs simmering away and decided to make the Carbquik chocolate chip cookie recipe (slightly altered).

Here's MY version:

Carbquik Toll House Cookies

1 cup Carbquik **EDITED TO CHANGE AMOUNT FROM 1.5c**
1/2c. vanilla whey protein
1/2tsp baking soda
3/4c sugar free chocolate chips
1/2 tsp salt
1/3c + 2TBSP brown sugar twin packed
1/3c + 2TBSP splenda
1/2tsp vanilla extract
1/4c egg beaters
1 stick of light butter, softened

Combine carbquik, baking soda and salt in a small bowl. Beat butter, splenda, brown sugar twin and vinilla in a large mixer or wol till butter is well creamed. Add egg beaters. Gradually beat in Carbquik mix and protein powder. Stir in chocolate chips. Drop by rounded tablespoon onto un greased baking sheet and bake for 9-11 minutes or until golden brown. Cool on cookie racks. Makes 24 (2 dozen) cookies.

Fat- 4.5g
Carbs- 3g
Protein- 4g

I did try one and they're pretty good. They're not chewy and soft like Nestle Toll House Cookies are, but i think with a little experimentation, they could get there.

Try using Diabetisweet (available at Target) for the sugar substitutes - that will keep the cookies moist and softer - also take them out of the oven 1 minute before you think they are done. I have a crunchy chocolate chip cookie and have spent the time trying over and over again (my poor husband - NOT! lol)

Ooh, thanks for sharing. . .  I have been wanting to make these (bought the Carbquik last year, just never got around to it), now that I know someone who has used it making them, I will try them, using the diabetisweet as Liz suggested, oh and I have to have pecans in mine ;)  Yum, yum, hopefully, I will be able to have them around and they won't be a trigger food. . .

Where did you get your carquick at?  I want to get some but when I went to their site... nothing in a 60 mile radius of Reading or KOP carries it...
