I was just winging it but here's the rough idea.
1/2 cup quinoa cooked in water or stock
sautee 1/2 an onion and a few cloves of minced garlic. Add in 1 box frozed, defrosted spinach and salt & pepper to taste. Let cool, add in feta cheese and quinoa - stuff into mushrooms and bake at 350 degrees for about 20-25 minutes depending on the size of the shroomies.
