Happy Monday Gang!! I hope everyone had a nice Easter. We went to my step-son Bob's and had dinner with his family. Irvin got to see his newest granddaughter Myla. She's just 2 months old and he also got to see his two great-granddaughters Aurora and Aubrielle. Irvin also started his job today and he was so excited got there early.

I just have to finish up my 1st quarter solid waste report and then there's not much else going on at work this week for once.

B: coffee with MCT oil 2 egg bites

L: 2 deviled eggs and 2 caprese salad on a stick

D: left over short ribs

Well see how Irvin feels after his first day of work as to whether or not he wants to go to the Y. We did go Friday and Saturday.

Good mornin!

Nothing much going on today. I've been wracking my brain with the insurance company that handles my Medicaid. They are just throwing up every road block possible. Now I need to sign a form that they sent to my doctors office. We won't have the car back 13th. I told em it was ridiculous. My pain has been the worst it's been in a very long time. I'm also sick with something. I'm highly HIGHLY annoyed.

I might work on my room a bit. Or just loaf around. Blargh.

food is unknown. I might make some stew or soup. Other than that not a clue.

tarts I made for my nieces birthday and Opal this morning.

Oh Mel I'm sorry to hear you're not feeling well. I swear insurance and doctors' offices can never get things right.

Those tarts look amazing. I bet your niece loved them.

Happy Monday, Everyone!

I hope you all had an awesome Easter filled with quality time and great memories with your family. There is nothing like a holiday weekend to recharge the batteries before diving back into the grind.

Today's Motivation

To kick off the week, I'm hitting the pavement for some exercise. There's no better way to stay motivated during a long walk than by blasting some metal. The energy and the tempo are exactly what I need to keep my pace up and stay focused on my goals.

Speaking of goals, I am still in the research phase regarding weight loss surgery. I'm taking my time to look into the different options to figure out which path is the absolute best fit for my health and my future. It's a big decision, and I'm staying positive through the process!

Around the House

When I'm not out walking or working on my health journey, I'm heading back into the horror movie room. I am so close to finishing the setup of the collection! There is something so satisfying about finally getting every flick in its right place--I'm hoping to wrap it up today so I can finally sit back and enjoy the atmosphere.

On the Menu

I'm sticking to some delicious, healthy Italian-inspired fuel today to keep my energy levels consistent:

Breakfast: A Savory Tomato and Basil Caprese Omelet.

Lunch:Hearty Tuscan White Bean and Kale Soup (Ribollita-style).

Dinner: Zucchini Noodle "Pasta" with a lean Turkey Bolognese.

It's all about finding that balance between crushing goals and enjoying the ride. Have a productive Monday, stay loud, and keep moving forward!
