Hello, old friend: HOT FUDGE CAKE

I went to Kroger today and there was a full bin of Betty Crocker's brownie mixes.  Just $1.  Boy that sure sounded good.  I had not touched brownies in Lord knows how long!  I got home from shopping, tired, exhausted, crampy...  and asked myself "What can I do besides laundry?"  So I stuck some chicken breasts in the crock pot for tomorrow's dinner, and fixed Tim a deli sandwich, low carb chips, salsa and I had deli meat with cheese & 2 Kay's Naturals protein chips.  Then I was full!  I sat here awhile, then decided I'd fix brownies.  You see, I had ordered some low carb Big Train Chocolate Chip Brownie Mix and Chocolate Chip Cookie Mixes from Bariatric Eating a long time ago... they have been in the cupboard for a rainy day.  I felt blah today, still recuperating, and figured, WHY NOT?  So I made up the brownies.  Really simple.  Add butter and one egg. So then when they were done, they were still warm.  I got a ramekin, put a piece of brownie into the bottom, put two spoons of Breyer's Carb Smart Vanilla, a little whip cream, SF Hersheys heated in microwave, and a cherry. WOW!  I have not had a wonderful hot fudge cake in I don't know how long!  So it beats the guilt and dumping of a REAL Betty Crocker brownie... it tasted great to me!  I would do food porn, but I already ate the one I fixed!  And, that means I would have to make another, which would of course be a sin to eat another serving of something so wonderful!!!  Twice in one day!

Now that sounds deli****horoughly enjoyed that dessert yesterday that Scott and Beth made but I could go for a hot fudge cake in about another month. Thanks for sharing. : )
