Savory Sweet Pumpkin Soup Recipe

I was craving pumpkin pie, so I came up with this recipe.  Don't let the onion put you off...I think it adds interest to the taste.  Here it is: Half one med. onion, chopped 1 small (15 oz) can pumpkin 1 tsp. pumpkin pie spice 1 tsp. corriander 1 tsp. curry 1/2 tsp. cumin 1 tsp. granulated garlic 4 pkgs. "pink sugar" (Sweet & Low, i.e.) 3 cups chicken broth Saute onion in 1 T. olive oil til translucent. Add spices while onion cooks. Add pumpkin, and stir in chicken broth.  If too thick, add 1/2 c. broth to your consistancy. Heat to boiling, then process in blender til smooth. Enjoy! Judith

I had pumpkin soup on the cruise we went on and it was a interesting taste  wonder if this is any where near the taste?

My step-son stayed with me for a while, and he loved East Indian food.  I did a lot of experimenting with spices and ingrediants, and came up with some pretty good recipes.  I hope you like this one - I think it turned out really well! Judith
