Cottage Cheese Pancakes

Since we have many new people I thought I'd share the recipe I have for cottage cheese pancakes. They are sooooo good! 2tbs flour 1 packet of Equal/Splenda 1/2 c cottage cheese (I use Breakstones FF Small Curd) 2 eggs, beaten 1/2 tsp baking powder pinch of salt 1/2 tsp Vanilla Extract Beat together all ingredients making sure there are no lumps of flour. Heat non-stick skillet, spray with Pam. Pour a tablespoon of mixture on to skillet. When they are golden underneath, flip and cook till golden brown. They turn out like crepes and freeze well.

These are my fav.  I like to add a tbsp of canned pumpkin and a tsp of pumpkin pie spice - YUMO!!! Also, I blend mine in my hand held blender that I use to mix my protein shakes.  I mix until the batter is smooth - it's perfect!
