Daily Challenge - Find a good salad recipe

Well, Kashi has given us a challenge that is actually do-able for most of us....

Caesar or Waldorf? Beet or tabbouleh? It’s a toss-up. In the next 24 hours, add to your culinary repertoire by finding a salad recipe you’d like to try out.

I think I would choose the Beet or Tabbouleh over the Ceasar or Waldorf any day . Even if you went the light dressing way , still to many calories .  Spinach - All Green Leaf Salads are to me the best way to go . They contain iron and have great nutricional value - versus heavy salad dressing laden salads as the Ceasar . Many think ordering the Ceasar is a better choice . You would be so much better off ordering the side of steamed veggies .  I just put together the other night an awesome garlic warm spinach dish. Easy to fix and a yummy alternative to salads .  A little EVOO - crushed fresh garlic - heat in pan till garlic starts smelling yummy but not burnt, add your spinach and baby tommatoes - cook till tender - throw in some walnuts .. and Waaala .. very awesome when served with balsamic vinergrette or a champange vinergrette.  Enjoy Salads  !!
