RR Tuna steak meatballs....

Rachel Ray just had an episode with

Puttanesca with Tuna Polpette and Penne

It looked soooo yummy!  I never thought about turning a tuna steak into "meatballs", but I bet that would be good!

I would skip the pasta and cut a bit of the EVOO, any thoughts on what could replace some of the breadcrumbs as a binder?  If anyone tries this, let me know how it turns out, I will not be enjoying "real" food for another month.... ugh.  I should turn off the food porn station, it is not helping.

What about Parmesan or some sort of cheese as a binder?

 You could probably use parmesan as a binder. That's a lot of breadcrumbs, really. I use parmesan as a binder in tuna and salmon patties along with egg. It's really good and doesn't leave an overwhelming 'cheesy' taste.
