What I eat when I want a cheeseburger (recipe)

Bacon Cheddar Meatballs

2 tbsp olive oil
1 medium onion, minced
8 oz raw bacon, diced
2 pounds ground sirloin
6 oz fat free Cheddar cheese, grated
1/2 cup bread crumbs
3 eggs, lightly beaten
1 tsp salt (optional)


Preheat oven to 450

Brush a 13x9-in baking dish with 1 tbsp olive oil

Heat remaining 1 tbsp olive oil in a large skillet over medium heat. Add onion and bacon,
stirring frequently until golden brown (about 10 minutes)

Using a slotted spoon, transfer onions and bacon to a small plate and let cool.

Combine bacon and onions with the rest of the ingredients in a large bowl and mix by hand
until thoroughly Incorporated

Roll the mixture into 24 golf ball sized meatballs, making sure to pack firmly. Place the
balls in the prepared baking dish, and roast until cooked through, 18 to 20 minutes.

Makes 24 1 1/2 inch meatballs

This is a recipe I found in People adapted from the Meatball Shop Cookbook. It originally called for 2 tsp salt, but that was too salty for me so I reduced it to one for this version. I rarely salt my food, so this may still taste salty. You may want to leave the salt out and add salt at the table if needed. The bacon and cheese add a salty taste all by themselves. You could also substitute ground turkey for the beef. I used the 95% lean beef and center cut bacon for less fat. This is a great prepare ahead and freeze recipe.

I will probably do that - the cheese and bacon will probably give it enough flavor that I won't miss the salt! :)

 Or use turkey bacon tastes just like bacon and I am wondering how this would work with ground turkey??

Try that change and let us know how you like it.  I love a burger with bacon and cheddar- so sometimes I really want that flavor.  This was my safe way not to feel too deprived.  I like to look for healthier versions of my favorites to keep myself in check.
