Chicken Salad

Hey Everyone!  I've seen a lot of posts bouncing around on here about how everyone makes chicken salad.  Pre-WLS, I made a bombin' chicken salad....but it unfortunately was bound together with Extra Heavy Hellman's Mayo (yes, they make extra heavy)...so obvi that isn't on the new diet...so I've been searching for new (lighter) recipes.  I found this one that looks promising and I thought I'd share!  You only use a little bit of mayo, and use some broth (from which you cooked your chicken in) to keep it moist.  Here it is!

I make chicken and tuna salad on the regular for lunches at work. I use regular mayo..I don't slather it but it's plenty to make everything moist. I did during the losing phase also and I made it to goal in 8 months losing 125 lbs. the "lighter" options don't do it for me...I can taste the difference and they give me gas.

I don't plan on using FF or lite mayo either.  I thought this sounded good b/c of adding the broth.  I'm just getting ready to start soft foods and I thought that would be good to make the chicken wet enough to help my new belly tolerate it.

didn't realize you were such a "new" sleeve...the broth is probably a better choice on new tummy. Let us know how it turns out if you make it!! yayyy!!!
Another variation of chicken salad...and I will probably get finger points for this but oh well....wait until you are cleared for ALL foods. dice up apples and cut grapes in half and mix that into the chicken and mayo. it's SOOO good. I also add a little franks red hot to it when I eat it.

Everyone has their own take on this - what I do (and I think I got this from Frisco?) is to mix about half-half regular (full-fat) mayo with Greek yogurt.  Cuts the calories, keeps it moist and creamy, and the Greek yogurt adds a nice zip.

like another poster said, you can sub the mayo for plain greek yogurt. it works really well and ups the protein.

Here are 2 ideas for you for chicken salad to add to your collection

Buffalo chicken salad- shredded chicken, plain greek yogurt, crumbled bleu cheese, and a dash or 2 of wing sauce.   Flavorful!

Curry chicken salad- shredded chicken, half mayo/half greek yogurt, several sprinkes of plain curry powder, green or red grapes- halved, and slivered or sliced almonds.

Keep it interesting!

I like the idea of using some broth to keep the chicken moist. I do find that the chicken salad I made at night has gotten a little dry by the next day. I can add more mayo, but broth would be a better option.

If you have flavor-free protein powder, chicken salad is an excellent place to add it to up your protein intake.

I mix 1 Table Spoon of the Hellman's Chiptole Mao with Greek Yoguart for my chicken salad (using canned chicken breast)
