I can vouch that the red version rocked my socks. Best soups ever and has gotten me into making soups for the first time in my life.

Yeah, I like the red one too, but the Yellow Middle Eastern one is my all time favorite.  I like it with wild mushrooms.  I did not add that to the recipe, but that's the way I make it at home.

I have been on a huge mushroom kick here recently, I will remember this.. I still have not tried that one, but I will!

Don't forget to garnish with a dollop of lite sour cream.  Yumm.

Dearest Elina, 

Would you kindly tell me 1) how can I make this in a smaller quantity? It's just me and I don't want to have that much to freeze.  Also what can I substitute for the 2)baby bok choy and/or broccolini?  Hard to find items in my neck of the woods...

So nevermind that first question...I see the response for that...but what items can I sub for the other things?

Just half the recipe and the soup will stay in your refrigerator for almost a whole week.  If you can't find one or more of the ingredients, don't worry.  You can substitute broccoli for broccolini and you can leave out baby bok choy.  You can also add any veggie that appeals to you.  Just try to balance any bitter veggie with something a little naturally sweeter.  But really, this is a very forgiving recipe, there are millions of different ways it can be done.  The basic idea is that the chicken breast is pulled apart, and that the veggies are blended.  That and a dollop of sour cream should make it perfect for you.

Man oh man I am excited now! I just bought some more broccoli and I think I can see what other goodies I can get to add in....YUMMMMM... And I just got some more light sour cream so I KNOW that's gonna make it taste oh so good! 

*my stomach has been gurgling (in a good way) just thinking about it over here lol*

 Have you ever made with ground chicken or turkey?  My tummy isn't ready for chicken yet, but want to try this soup.  It feels like fall and I love a good soup when there's a slight chill in the air...

I'm pissed!!!!!...I miss this soup soooo much! But, since we have moved to our house my side by side fridge is a piece of crap!! No room for anything!! We were talking the other day about making big pots of things to freeze for fall/winter lunches and I said I need my Elina's hubbys soup backkkk!!!...I need to freeze...Cuz it makes a awesome pot and way to much just for meeee!!!!!
