Would you kindly tell me 1) how can I make this in a smaller quantity? It's just me and I don't want to have that much to freeze. Also what can I substitute for the 2)baby bok choy and/or broccolini? Hard to find items in my neck of the woods...

Just half the recipe and the soup will stay in your refrigerator for almost a whole week. If you can't find one or more of the ingredients, don't worry. You can substitute broccoli for broccolini and you can leave out baby bok choy. You can also add any veggie that appeals to you. Just try to balance any bitter veggie with something a little naturally sweeter. But really, this is a very forgiving recipe, there are millions of different ways it can be done. The basic idea is that the chicken breast is pulled apart, and that the veggies are blended. That and a dollop of sour cream should make it perfect for you.
Man oh man I am excited now! I just bought some more broccoli and I think I can see what other goodies I can get to add in....YUMMMMM...
And I just got some more light sour cream so I KNOW that's gonna make it taste oh so good!
