Asparagus is just farther down the list. These are foods that hit multiple top 10 sources of the essential vitamins and minerals. So basically eating Spinach covers 11 of the 20+ essentials. So basically adding spinach to your meals gets you quite a bit of the way through your vitamin needs for a day. Eating Salmon and Spinach would cover quite a few more.

Thanks for the list.......I was just thinking about using spinach instead of romaine for salads.

This is how I have been making spinach lately and I love the flavor.

Heat up about a tablespoon of olive oil in a saute pan, melt a stick of butter.

Throw in about a table spoon of chopped or minced garlic.

Throw in a bag of pre-washed spinach (or two as it shrinks up a lot)

saute spinach until it all shrinks. Remove and eat.

Of course raw is more nutritious.
