Guy's Big Bite Turkey Quinoa Kale Stuffed Peppers with Tomatillo Avocado Sauce
I made this recipe tonight from Guy's Big Bite and it was very good. Pretty fast, easy to make. I flipped the parmesan and panko amounts to make it more low carb friendly. It came out good, it was pretty easy to make:

It does clock in at 17 carbs from the Quinoa and Peppers with 16 grams of protein. Not a great recipe for those really watching carbs, but very tasty. Veggies too.
