Cooking Corner - Quick Eats

WantMyLife's salad recipe gave me a great idea for this week's Kitchen Corner. What do you do when you want something tasty and satisfying that is fast and easy? Here is one of my go to recipes it takes less than 5 mins to make and I find it very satisfying:

Fast Buffalo Chicken Dip

1 Can White Chicken Breast

Franks Hot Buffalo Wing Sauce (to taste and wetness)

1/4 cup Crumbled Blue Cheese

Blue Cheese Dressing (I used a 35 cal yogurt based from Bolthouse) (to taste and wetness)

Celery hearts cut into 2 inch pieces

Mix it all together in a bowl, add the hot sauce and blue cheese dressing to get the consistency and flavor you are looking for and eat it with the celery pieces. I have also eaten this with Lentil Chips and found that to be more like eating it with Tortilla chips when I want a starchy feeling crunch.

I have a blueberry cheesecake I love. It was recommended by someone on the VST board:

 

Blueberry Cheesecake

1/2 cup to 1 cup Fage 0 greek yogurt

1 T. to 2 T. whipped cream cheese

Splenda to taste

Frozen blueberries ( I prefer the small wild ones available at TJs)

1 graham cracker, if you're feeling extra indulgent

Mix the yogurt, cream cheese and splenda. I use 1 T. for 1/2 cup and 2 T. for a full cup. Top with blueberries sweetened with Splenda. Put graham cracker in a baggie and pound with a can till it's crumbled. Pour crumbs over the top. Tastes great, is filling, and has 23 grams of protein if you make the full cup.

I am going to try this. Instead of graham cracker I'm gonna grind up some pecans or almonds and a little bit of granulated Splenda. 

Sounds delicious.

This is what I make when I want something sorta desserty, but still healthy.

1/2 c plain Greek yogurt

1/4 c blackberries

2T slivered almonds

2 T dried coconut strips.  I get them at Trader Joes

I get some unsweetened shredded coconut from Whole Foods I can try this with that

Interesting sorta like a shrimp salad. Sounds good.

It is different but packed with protein. According to MFP:

Protein- 24

Carbs- 2.5 (from the low fat cottage cheese)

Calories- 135
I think next time I will add 1 or 2 cherry tomatoes sliced up or cucumber and red onion

I had to edit this to change calories to 135. I forgot I only used 1/2 serving of shrimp today. I ate this with grilled chicken bites so I didn't need the entire serving of shrimp.

Mock danish:

1 egg, beaten with 1.5 oz cream cheese..a bit of splenda or other sweetener, vanilla.. pour into small bowl, add dollup of sugar free preserves or some berries to the middle (they will sink)- nuke 1-2 mins till done. Kinda an eggy-sweet thingie.. I may try adding a tsp or so of coconut flour to make it more batter-like... I'm in maint, so keep in mind that the cals/fat is something higher than weight loss mode for many, though I'm sure one could cut back on the cream cheese and add a little protein powder..?

Ya know now I have to go send out my husband for the damn ingredients for this.  It for whatever reason sounds fantastic at the moment, and I normally do not go for this kind of thing.
