Another chicken salad--for Elina (plus a few other favorites)
I love the website skinnytaste.com. A lot of what she posts is not WLS friendly for those of us counting carbs, but if you look at the low carb recipes quite a few are useful. Also, when I plug in the ingredients in mfp using what I actually use (yay for Trader Joe's Greek yogurt) and my portion sizes, I often come out with fewer calories and carbs than she did.
This is a recipe for Pistachio Cinnamon Chicken Salad. It's a nice twist on the usual chicken salad mix. There's satisfying crunch from the nuts and celery, too.
Another favorite is the Grilled Pollo Sabroso prepared without skin using separate thighs and/or drumsticks. My entire family enjoyed that (picky kids, too). They also all ate the Dijon Lime Chicken (I used greek yogurt instead of mayo b/c it's what I had and it worked just fine). Both are good cold, too.
These Asian Glazed Drumsticks are a delicious splurge during weight loss (6 carbs per drumstick), but man, the sauce is really REALLy good, and you could lower that by using artificial sweeteners.
I swear I do not work for Gina or skinnytaste.com. I've just liked nearly everything I've made from her site (including pre-op, pre-wls, etc.) and her recipes tend to be fairly easy to follow and modify as needed.
