Cooking Corner - High Protein Low Carb Brownie

Takes a minute to make this. Basically has the same macro nutrient profile as a protein shake you make in the morning and I was surprised at how much like a brownie it really was and how good it tasted. I cooked mine a little longer than it said to here and it came out a bit dry and dense, so just follow what this guy says.

You could cut out the peanut butter and use almond butter instead or cut out the butters all together and use a little bit of almond milk. Some baking soda might make them a bit fluffier. This is a very simple minute cake recipe compared to others I have seen and tried. So far this is my favorite.

Looks great! Do you think it needs the oil from the peanut butter to end up like it does?  I only have PB2 in the house and would reconstitute it to a liquid but it has no fat in it.

I haven't tried it any other way but I suspect it does, you could add a small amount of Pam or vegetable oil to it, coconut oil would be best. Butter would work too.

I would not reconstitute the pb2, I would put it in dry and add a little almond milk to the batter before cooking.

It looks yummy, but when I add up the ingredients it's about 400 calories - which considering that it has about 50 grams of protein is good, except... At almost a year out I'm used to eating more volume for that many calories...

I think I'll make 1 to split with my hubby and blame you if it turns out to be too yummy. Fair deal?

Oh yes - I'll also add some cocoa. (For the magnesium. That's it - for the magnesium)

I have made it and yet to eat my piece (saving it for later)...- my kids hated it...lol, but I have a feeling I'll love it.  It smells great.

I broke the numbers down as such:  Protein: 12.4gr Cals: 120  Carbs: 3gr  (if you break the brownie into 3 pieces.

I love muffins in a minute. There are a few good gluten free ones that I make. I use almond flour, ground flax seed, egg.  I make a blueberry muffin. There is a flax seed one you can actually make a low carb bun and split open and use as a bun or open face which is enuf for our small tummies. I am always looking for these type of recipes.  Thank you

I don't suppose you'd be willing to share your recipes? I mix up a multiple batch of an adapted flax muffin in a minute recipe and bake it in my mini cupcake maker. I'd love to be able to make a healthy blueberry muffin for myself.

Sure, no problem.  The basic recipe is:

 

2 tablespoons almond flour, 2 tablespoons ground flax seed, 1 egg, 1 tablespoon butter or coconut oil ( I use less) , 1 teaspoon baking powder, dash of salt, and some sweetener ( I use swerve or just like sugar)

melt the oil in small glass container, beat in the egg, add all other ingredients, then I switch it around sometimes I add blueberries or raspberries or just cinnamon and almond slices, I usually sprinkle little sweetener an cinnamon on top and nuke in the same glass dish for one minute plus a couple extra seconds. When you touch on top should not be wet. Makes one pretty big muffin could split. For me very filling and satisfying.

I'm in Mexicali right now (hubby is being sleeved tomorrow) but will buy almond flour when I get home and make these. I'm pretty excited about being able to make a healthy blueberry muffin.

I don't add any fat to my flax muffins (the original recipe calls for 1 TB of butter per muffin!) and they turn out well, so will try these without as well.
