Body Fat on Men vs Women
You can get pretty close with a formula and there are a bunch of calculators, try bodybuilding.com. I have a scale by Omron (link below) that has a handle so you have sensors in your feet and hands and it measures your percentage of body fat, your percentage of muscle, your true bmi, your visceral fat (fat between your organs) as well as your body age. Its pretty cool. I don't know how accurate it is, but I really look for trend not at the actual numbers per se. I want my body fat going down, my bmi going down and my muscle going up.
The trend is certainly your friend with these impedance scales, as they are deriving everything from body water. I basically used a moving average on my way down and that gave a good indication of progress. Mine will vary on BF% by 4-5 points from early morning (when we're dehydrated from overnight) to late afternoon (when we are typically as hydrated as we will get, and is usually considered to be the most accurate number.) Using my surgeon's scale is more of a crapshoot with the variation depending upon the time of day I was measured. Using the trend or moving average method, my home scale numbers correlated fairly well with the hydrostatic tests that we did a few years ago, though in my wife's case (she was a few years post-op and down around 200# but pre-op on plastics,) things didn't correlate so well, so I suspect that the algorhythms they use to derive the body comp figures don't know what to do with the disproportionate amount of skin.
For those into competitive goal setting, we have one guy in my doc's group who got himself down to 4% BF (from 500+ lb!) before letting himself go and settle at 6%.Maybe a bit obsessive/compulsive?

I don't know if my eyes haven't caught up yet or if it's the excess skin, but I'm at 33% (well, as of June 25) and I think I look more like the 40-45%, not in terms of size, but in terms of skin texture. Damned cellulite!!This also confirms my idea that 25% body fat is a good goal for me. Still has some curves, but looking fit. That's where I'll be happiest. If I happen to dip lower, well, ok. :)
Keep in mind that if you were not very active before and do not have much muscle underneath, you might be a bit "fluffier". As you start to exercise more and start working muscles you haven't worked in a while, everything will tighten up. I am starting to see abdominal muscles I didn't have when I was a kid. It takes a lot of time for your eyes to catch up too. Also you need to give your skin time to retract too. Rapid weight loss really does a number on your skin.
