Taco Casserole

This is one of my all time favorite low carb recipes. I made it so much I actually got burned out on it. Instead of refried beans I use refried black beans or whole black beans. I add Jalapenos and I use Rotel Hot  for the tomatoes and chiles.

Oh my gosh, I have been looking for some inspiration to start making dinners that I can eat now and after! This blog is great! THANK YOU!

HW: 285  CW: 277 GW: I'm hoping for 145, but haven't discussed it with a nutritionist yet.

This is a great one to make on a Sunday night and then I love these little ZipLock round containers that hold up to 2 cups they are great for a 1/2 to 1 cup of this stuff or 2 cups of salad or soup, whatever. Anyway I would make this on a Sunday, my family would eat about half of it and the other half I would put in containers for the week and I would have my lunch ready to grab every day for the week (I always loaded up more because my daughter would grab one after school, my other daughter would take one to work, and my wife was always theiving my left overs.

Hmmm... this looks fantastic. What's the carb count for a serving? Seems like it would be high because of all the beans.

With Black Beans the way I have it in MFP it comes out to:

215 calories

12g carbs (4 fiber, so 8g net)

19g of protein

9g of fat

25g of calcium

 

I have a 2nd one in that I used all organic ingredients with turkey instead of beef and refried beans and it comes out to:

202 calories

14g of carbs (3 fiber so 11 net)

14g of protein

10g of fat

18g of calcium

For how many ounces of a serving.  I don't thin that fits into my plan and that makes me sad.

Its somewhere between 1/2 and a cup of food. Remember its just an estimate and its a large meal too. When I was at the point I started making this I was at 800 calories per day. The amount you are exercising you should probably be between 800 and 1000.

This is one of my absolute favorite recipes from Nik.  It's also easy to adjust if you want to change the nutritional stats based on how lean the meat is and how much of the various ingredients you use.  It's a very forgiving recipe and really tasty....and yes, it stores well.
