Recipe of the Day - Shredded Beef

This is a recipe from my blog. My mother has been making this as long as I can remember. It is very easy, does take a couple of hours in the oven, but it is very tasty, inherently low carb and you can freeze it and reheat it when you want it. My mom used to serve this on sandwiches, but being low carb I just eat it straight up. I sometimes like a little horseradish or horseradish sauce with this. Its great with A1 or Heinz 57 too. Also works well with BBQ sauce. I hope you enjoy.

There is one on my blog that I did in the slow cooker that is spicy but you will want to do this on low for like 6 to 8 hours.

My grandmother made something similar to this and we would pour vinegar on it...oh man, my mouth waters just thinking about it.  So simple, yet so delicious!

Two words - Pressure Cooker!  I love this thing.  I don't use it very often, but you could do this recipe in about 45 minutes in the PC.  I made beef enchilada last week -- same basic idea -- big hunk of beef, then I put in beef broth, onions, some seasons, and voila -- 45 minutes later (it was a big one), shredded with a fork! 

I love my slow cooker too, but if I'm cooking for the week, sometimes I need to get it all done faster!

I have one and never use it, I will give it a shot because if I could get this done in 45 mins I would make it much more often. I usually make a lot of it though for parties and such I would still need to use the oven.

Pressure cookers are great for "slow" cooked beef stews, soups and chili.  I make Cuban shredded beef (ropa vija), in my pressure cooker from time to time.  It's fast and delicious.
