There is no particular recipe. He makes the faux cauliflower mash potatoes by steaming the cauliflower and mashing it with lite sour cream and Parmesan cheese (just a little sprinkle) salt, pepper and a touch garlic. The sauce is made by browning onion and garlic, adding lean ground beef, than adding spinach, olives, wine and marinara sauce. I think he also adds some fresh spices (Italian style, think fresh basil, oregano). He cooks this down and makes it into a soupy sauce and puts it over the cauliflower mash. It is really good and very lite. A meal is well under 200 calories (maybe even closer to 150) and is very filling.
Ah you see! I would not have guessed he uses ground beef but perhaps strips of filet mignon quickly stir fried with the basil, garlic and onions, sort of thai style. I will try it with the ground beef. Thanks for the tips! Also the faux mashed potato/cauliflower mix with the touch of sour cream and parmesan and garlic sounds great!
